Shredded Chicken

I love the recipes that call for shredded chicken. For a long time I was buying a rotisserie chicken and shredding it and then I realized that I could make the shredded chicken myself. With the crockpot. So it’s really easy and not really time consuming since the crockpot does the majority of the work.

The best part is that if you’re into meal prep, this is definitely something you can take care of on your weekend or days off and save in the fridge the whole week for whatever recipes you’re planning on cooking during the week.

Shredded Chicken

2 pounds of boneless, skinless chicken thighs

Grab your crockpot and spray it with non-stick spray. Place your chicken in the crockpot (frozen or thawed) and cook on high for 4 hours. Take off the cover of the crockpot, let it cool completely, remove the chicken and shred. Save in an air tight container in your fridge for up to a week or use immediately!
