One Pan Teriyaki Steak Dinner

Steak, steak steak. I love a good steak. But I don’t make steak on my own often. I tried one time, forever ago because a steak on the BBQ sounded amazing for dinner and I burned the stupid thing so badly that I had to throw it out and have something else entirely for dinner. A one pan dinner using steak though is something I can wrap my head around. Not just because I get steak but because I don’t have to use a BBQ so there’s less of a likelihood that I’ll burn it to a crisp.

The best part of all of this? Well obviously besides not having to use the BBQ…one pan is the best thing next to sliced bread (the good sliced bread, none of that white bread crap). It saves me sooo much time because I don’t have to stand in the kitchen the whole time dinner is cooking. Just prep it, throw it on a pan and put it in the oven until the whole thing is cooked. I’m totally about it.

The even more amazing part is that now that my kiddo knows that steak is delicious, this is a dinner the whole family loves. She even has a happy steak dance. What? That’s weird to you? The better question is why don’t you have a happy dance when it comes to food that you absolutely love that you can’t wait to get in your belly? I know after this dinner, even I have one of those now.

one pan teriyaki steak dinner

Prep time: 15 minutes

Cook time: 20 minutes

Serves: 4

1 1/2 pounds New York strip steak, cut into 1 inch cubes

1 pound asparagus, washed and trimmed

1 cup cherry tomatoes

1/2 cup Teriyaki sauce (I dig the one from Trader Joe’s)

Salt and Pepper to taste

Preheat the oven to 450 degrees and line your largest baking sheet with tin foil, then spray with non-stick spray. Salt and pepper the steak, and arrange the steak in a single layer on the baking sheet. Toss it with the Teriyaki sauce, place the veggies in a single layer next to the steak and bake for 20 minutes or until steak is cooked to your likeness (my hubby prefers a rarer steak, so I do anywhere from 16 to 18 minutes when he’s going to eat this dinner). Serve it while hot! Enjoy!
