i love summer

The warm weather, the afternoon spent at the beach, BBQs and cookouts, sunny days, but mostly the produce. I love summer produce. Peaches, nectarines, and figs. Oh figs. So underrated but so delicious and versatile.

Figs are the perfect thing to toss together as an appetizer on a warm summer night with a glass of white wine, and our go to snack during the summer months.

Check this one out as the perfect start to a family dinner or even when you're trying to impress that fancy dinner guest. Just make sure that the inside of your figs are brilliant in color (and not white) so they taste amazing!

figs and cheese

1 package of figs, washed and sliced in half

1 package of goat cheese

A splash of Balsamic Vinegar

Preheat your oven to 425 degrees and line a cookie sheet with tin foil, then spray with non-stick spray.

Place the figs cut side up on the tin foil, then place some goat cheese on the top of each fig. Splash your balsamic vinegar over the figs and bake for 15 minutes or until the goat cheese has slightly browned. Enjoy!
