Anytime I can find a new way to cook chicken, I’m taking it. Not just because we eat a lot of chicken but because eating a lot of chicken means there’s the potential for cooking it to become mundane. You end up getting stuck in the same patterns of how you cook the chicken and then all of a sudden you’re stuck with all this chicken you don’t want to cook because you’re in a rut. And nothing sounds good.

Obviously I’ve been there.

My family loves big flavors with tons of garlic and seasoning. So when my lovely friend Katelyn gave me this awesome chicken recipe, I knew it would be a regular in my rotation of chicken.

It’s definitely big on flavor and just a hint, the more garlic powder you can add the better!

Prep time: 15 minutes

Cook time: 20 to 30 minutes

Serves: 8 to 10

2 tablespoons olive oil

1 bunch of green onions

3 pounds chicken thighs, chopped

1 tablespoon black pepper

Garlic powder to taste (the more the better!)

1/4 cup white vinegar

1/4 cup water

Soy sauce to taste

Grab your largest skillet and heat the olive oil over medium heat. Add in the green onions and saute for around 10 minutes. Add in the chicken, black pepper and garlic powder, cooking until well combined. Then add in the white vinegar and water, cooking until the chicken is cooked through and half of the liquid has evaporated. Add in soy sauce to taste and serve while hot!
