The Easiest Broccoli Ever

i am so fortunate

That I am not in a household with picky eaters. Generally speaking, my family will each anything I put in front of them. I say generally because as far as little kids go, my little one will definitely eat her fair share of interesting things but like all small kids, she still has her phases of not wanting to try something based solely off of how it looks.

Broccoli is NOT one of those things. We all love broccoli, but we all love it when it's cooked. It's such an easy side dish and such an easy way to add green to your dinner plate. Plus it's really quick to make and I always love making anything that's efficient with my time.

The key to the easiest broccoli side dish though is not the broccoli, but the ghee. Adding in just a little bit of ghee adds a creaminess and depth of flavor that butter alone just can't do.

As a side note, broccoli is also really easy to make in advance and freeze. For the recipe below, you would freeze in ziplock baggies after it cooled but before adding in the spices and the ghee. The spices and ghee would get added in after the broccoli was defrosted and reheated, it's that simple!

Easiest Broccoli Ever

Prep time: 10 minutes

Cook Time: 10 minutes

Serves: 4

Two large heads of broccoli

2 tblsp ghee

salt and pepper to taste

Bring a large pot of salted water to a rolling boil. Rise and trim your broccoli, discarding the stems and place into the boiling water for 5 to 8 minutes or until bright green and slightly tender. Drain, add back into pot with ghee, salt, and pepper as well as whatever other spices you would like and serve while hot! Enjoy!

*If freezing for future use, after the boil, drain under cold running water and allow to cool, then separate into individual portions in freezer safe containers and freeze!
